
Our Brut Nature: a long and quiet journey
Producing a traditional method sparkling wine in Lazio, many years ago, almost seemed like a provocation. For us, it felt like a natural evolution of our work—a step in line with our curiosity and with the desire to fully explore the potential of our land. That’s how our Brut Nature was born: a classic method Chardonnay-based sparkling wine that we are proud to consider the first of its kind in our region.
A land we know very well
The vineyard where it all begins is located in the area of Civitella d’Agliano, in the Tuscia Viterbese—land we know intimately, which has been part of our family’s history for nearly a century. It’s a territory marked by volcanic soils and rolling hills that overlook Lake Bolsena. Our “San Martino” vineyard, planted in 1979, is small but valuable, and we tend to it with great care, respecting biodiversity and natural rhythms.
A slow and respectful process
Harvesting takes place in August, always by hand. After a gentle pressing, the must ferments in temperature-controlled stainless steel tanks. It then rests for seven months on fine lees, gaining complexity and structure. The next stage—perhaps the most important—takes place in our old tuff caves, where the wine referments and matures on the lees for 96 months at a constant temperature. We choose not to add dosage: we bottle it as Brut Nature, with no added sugars, to allow the varietal and territorial character to express itself more clearly and sincerely.
The profile of our Metodo Classico
The result is an elegant sparkling wine, with a fine and persistent perlage, offering aromas that range from citrus to aromatic herbs, with notes of ripe yellow fruit and toasted nuances from the extended lees aging. On the palate, it’s taut and fresh, yet also deep and savory.
